Finished in first-fill sherry casks (only three casks per year) with cask-numbered bottles and high-strength bottling for a bold, refined finish. The Irishman Single Malt Irish 17 year old 54% ABV Nose: Sherry cask influence lingers on the nose, unveiling dark chocolate. Palate: Toasted oak and sweet sherried raisins form a rich, layered palate, with subtle dark chocolate notes weaving through the sweetness and a balanced, lingering warmth. Finish: A combination of nutty oloroso sherry as well as a dark chocolate that begs to continue.
