A really exciting new core release from Islay independents Kilchoman. The age statement – a first for their permanent range – marks the 11 years since the distillery’s 2015 purchase of Rockside Farm, a milestone that enabled founders Anthony and Kathy Wills to fully pursue their original goal of farm-to-bottle production. Until now, that vision has been explored through the distillery’s annual 100% Islay release; with Rockside, it becomes a permanent fixture in their core range. The whisky is made entirely from barley grown on Rockside Farm, with every stage from malting and peating to distillation, maturation and bottling handled by the distillery onsite. A true single farm single malt – a remarkable thing in itself, but particularly so for a core expression. It’s matured in a combination of 80% bourbon and 20% oloroso sherry casks, and at 20ppm is more lightly peated than the distillery’s other standing releases, allowing the distillery’s latent fruity side to shine a little brighter. Presented at 46% abv, free from artificial colour or chill filtration.
