Known for its good flavour and high nutritional value, this adaptable crop is suitable for a variety of cooked dishes and sauces, while its mild taste makes it enjoyable in raw salads and sandwiches. Onions are low-maintenance, requiring only occasional watering during dry spells, but regular weeding of the rows is necessary. Harvest begins in July, a week or two after the leaves turn yellow. On a dry day, use a fork to loosen the onions from the ground and let them dry on the soil surface for a day or two in the sun. After drying, trim the top foliage and store the bulbs in a well-ventilated, dry location, where they can last for several months. Grown in full sun, these onions can reach a height of up to 45cm and a spread of 15cm when fully established.
